Wes gets all the credit for this one! He slightly modified a recipe he found at TasteofHome and we’ve had it twice within the past couple of weeks! I’m seriously craving again as I type up this recipe to share with you all 🙂
I’ve always been a fan of kielbasa, and combining it with the potatoes and veggies gives it the perfect balance for a meal. We enjoyed ours with a side of rice and it was delicious!
Potato & Veggie Kielbasa
PREP TIME 30 minutes YIELDS 4 servings
Ingredients:
- 1 lb red potatoes, cut into quarters
- 3 tablespoons water
- 3/4 pound smoked kielbasa {or Polish sausage,} cut into 1/4-inch slices
- 1/4 cup chopped onion
- 1 tablespoon olive oil
- 2 tablespoons brown sugar
- 2 tablespoons cider vinegar
- 1 tablespoon Dijon mustard
- 1/2 teaspoon thyme
- 1/4 teaspoon pepper
- fresh veggies {we used sugar snap peas the first time & green beans the next}
- 5 bacon strips, cooked & cut into pieces or crumbled
Directions:
The original instructions said to cover and microwave potatoes & water on high for 5 minutes or until tender {which we did} but you could also boil or steam your potatoes if you don’t want to use the microwave! Either way, while your potatoes are cooking, saute kielbasa and onion in
oil in a large skillet until onion is tender. Then add potatoes and saute 3-5 minutes longer,
until kielbasa and potatoes are lightly browned.
Next, combine the brown sugar, vinegar, mustard,
thyme and pepper & stir into skillet. Bring to a boil, then reduce heat. Simmer uncovered, for 2-3 minutes, then add veggies
and bacon and cook until heated through.

That looks good! We have been eating a ton of red potatoes lately. They are so good steamed with some coconut oil and fresh chives!
